<TIM Natural> TIM” stands for ‘Terroir Intensified Maceration’. Tri-Up, a green bean trading company in Taiwan, has been conducting research on coffee refining methods and the process protocols developed through this research. The appropriate microorganisms are collected from the coffee cherries and their surrounding environment and fermented with the coffee cherries to enhance the characteristics of the terroir. The most attractive aspect of this process is that it maximizes all that the terroir has to offer, including the varieties and microorganisms, and the terroir is “intensified” to the fullest extent. This process is natural, with the addition of must and cherries in the tank, and fermentation is done under anaerobic conditions. Fermentation takes place at a low temperature of 10-13℃ for 7 days, producing a mango-like aroma. It then undergoes a drying process in cherry form.
